Steaming your lobster is a practical way to reheat, cook and impart flavor. The easiest method is with just plain boiling water, extra large pot and a fitted steamer basket. Although, my favorite method is using a flavorful aromatic ‘broth’ that imparts just a touch of flavor. Instead of just plain water I like use either lager beer or white wine seasoned with halved fresh lemons, peppercorns and bay leaves. Don’t feel like cooking? Gorgeously Grilled.

Best with whole lobster, lobster tails and lobster meat

lobster meat total cooking time: 6-8 minutes

This is an ideal cooking method during the hotter months when outdoor grilling is choice. For your whole lobster split from head to tail, for lobster tails split in half length-wise and for your lobster meat skewer on either metal or bamboo skewers. Brush the exposed meat with melted butter. Place (buttered side down for whole lobster and tails) on an already preheated grill to about medium high heat (gas or charcoal will do perfectly). And cook according to the time listed above or until lobster is warm throughout and grill marks have formed. Brush with more butter before serving. You can jazz up your melted butter by adding any combination of chopped garlic, spicy peppers, fresh summer herbs, citrus or Old Bay seafood seasoning.

 

Baked or Broiled.

lobster trail total cooking time: 12-15 minutes (baked)

Baking lobster imparts incredible flavor and allows you to ‘stuff’ your lobster with numerous combinations. Preheat oven to 375°F. For your whole lobster split from head to tail and for lobster tails split in half length-wise and place meat side up on baking sheets. Combine equal parts melted butter and crushed ritz crackers and sprinkle on top each lobster half. Bake according to the time listed above and serve pipping hot. I love to add other flavors to my stuffing mix as well; chopped garlic, chopped shallots, fresh herbs, Old Bay seafood seasoning and citrus zest. You can use as little stuffing or as much stuffing as you like.

Broiled lobster mimics the grilled version and is a great option when the weather doesn’t permit outdoor cooking. For your whole lobster split from head to tail and for lobster tails split in half length-wise. Place split lobster on baking sheets and brush the exposed meat with melted butter. Preheat broiler, place oven rack about 10 inches away from the heat source and cook according to the time listed above. Brush with more butter before serving. You can jazz up your melted butter by adding any combination of chopped garlic, spicy peppers, fresh herbs, citrus or Old Bay seafood seasoning.

 

Satisfyingly Sautéed 

Best with lobster meat

Sautéing lobster meat is the building block to numerous culinary recipes. Sauté lobster meat in butter on medium heat, just low enough to heat the lobster but not brown or burn the butter.…And now the fun part… Use your sautéed lobster for lobster rolls, lobster tacos, green salad protein option, heaped on pasta alfredo, tossed with scampi fettuccini, topped on creamy risotto, filling for brunchy egg dishes…the sky is the limit with butter sautéed lobster meat.
