Valentine’s Day Seafood Love

A Tail of Romance

You’ll be sure to get plenty of oohs and ahhs this Valentine’s Day with Lobster Tails. Broiled butterflied lobster tails are very easy to make for all the show-stopping mouth-watering reputations they have.

To butterfly your lobster tails… Place the lobster tail on a cutting board and carefully snip through the top shell with heavy duty kitchen shears. Cut a straight line from the top (where the lobster tail was separated from the body) to the base (right before the flippers). Pry open the shell, wide enough that you can loosen the meat inside, keeping the meat still attached to the base. Lift the meat up through the cut opening and over the shell. Using a pairing knife score the meat in 3 lines, one down the center and two on either side, filleting the meat so it drapes nicely over the shell.

Preheat your broiler to high and make sure to place the oven rack 10 inches from the heat source. I like brushing my lobster tails with a little bit of melted salted butter mixed with some minced garlic before broiling. Broil for 10 minutes or until lobster is cooked completely. Garnish your lobster with lemon wedges and parsley-make sure to serve with some additional melted butter or reserved garlic butter.

Our Alaskan Crab Legs, whether they’re Snow Crab Legs, Jumbo Alaskan King Crab Legs or Dungeness Crab Legs, are a great solution for a crab loving significant other. All of our crab legs come with easy cooking instructions-but I like to mix it up a bit, get a little fancy (being a special occasion and all) with my dips.

Fancy buttery dips… these take a little bit of preparation ahead of time but well worth it.

Champagne Butter– (aka. beurre blanc) bring about 2 cups of champagne to a simmer. Simmer for about 20 minutes or until it has reduced slightly. Reduce heat to low. Cut 2 sticks of chilled unsalted butter into cubes and whisk one cube at a time into the champagne-repeat until all the butter has melted and the sauce is smooth and rich. Season with a little salt to taste.

Herb Butter- Melt 1 stick of salted butter. Chop enough fresh rosemary, dill and tarragon to equal approximately 2 teaspoons total, whisk that into your melted butter and serve warm.

Mignonette Butter- Melt 1 stick of unsalted butter and set aside. In your food processor combine 1 shallot, 1 garlic clove, 1 tablespoon of red wine vinegar, 1/2 teaspoon of black pepper and 1 tablespoon of fresh parsley. Pulse together. Remove from the food processor and whisk into melted butter. Serve warm.

Fresh Shrimp are ideal for pasta dishes-think Lady and the Tramp kind of romance! For my favorite shrimp scampi peel thawed fresh shrimp and sauté with white wine, butter, garlic and shallots. Season with a little salt and pepper before tossing with cooked noodles and sprinkling with fresh chopped basil and shredded pecorino cheese-delicious! You can add a little cream and sun-dried tomatoes for a Tuscan style creation.

Our Spiced Shrimp are the perfect base for spiced up recipes like Cajun Shrimp. Sauté peeled shrimp with onions, peppers, celery and diced tomatoes. Once bubbly stir in some cubes of butter and season with salt (and hot sauce for extra spice). Serve with crusty french bread, rice or cheesy girts-yum!

Our Crab Stuffed Jumbo Shrimp are a great solo entree act or partnered with a big juicy steak for the ultimate surf and turf.

Every Valentine’s Day should come with jumbo lump crab cakes! These stand alone super stars will make any dinner special. Here are some creative side dishes to spruce up your menu.

Mashed Sweet Potatoes with Honey Garlic Butter and Goat Cheese- peel, boil and mash your sweet potatoes. In a food processor combine softened butter with garlic and honey until smooth. Fold butter mixture into mashed sweet potatoes until smooth and serve with crumbled goat cheese on top.

Roasted Asparagus with Pesto and Shallots- Drizzle asparagus and shallot with olive oil and season with salt and pepper. Roast for 12-15 minutes at 425° or until tender. Top with prepared pesto sauce before serving.

Brussel Sprouts with Pecans and Balsamic- Par-boil brussel sprouts until al dente. Heat broiler to low and drizzle sprouts with balsamic and season with salt and pepper. Broil for 5-6 minutes or until lightly charred and tender. Top with chopped pecans before serving.

Roasted and Mashed Horseradish Potatoes- Coat yukon gold potatoes in olive oil and sprinkle with salt and pepper. Roast in a 400° oven for 20-30 minutes until fork tender. Mash potatoes with a potato masher and fold in a little cream, melted butter, horseradish (as much or as little as you like) and chives. Season to taste with salt and pepper before serving.
