What is better than shellfish stuffed with shellfish?!

Not much, or at least we don’t think so! Our team loved this recipe we found by Emeril Legasse on his website. We have changed a few things, but the essence of this crab stuffing for shrimp recipe is the same.

The shellfish flavors are delicate and they are complemented by the richness of the egg and mayonnaise and the brightness of the vegetables. This recipe for stuffed shrimp with crabmeat has many ingredients but it is easy to put together and is sure to please guests at your next get-together.

Stuffed Shrimp With Crabmeat Cooking Directions

Preheat your oven to 375 degrees Fahrenheit. Heat a large frying pan over medium heat and put in half your butter. Add your onions, celery, and green pepper and cook until the veggies are soft, about 5 minutes. Add the parsley and garlic and cook just until you can smell the garlic, about 1 or 2 minutes. Be careful not to burn your garlic, or your mixture will be bitter. Take your pan off the heat and let the mixture cool.

In a mixing bowl, combine your cooled vegetable mixture, Cameron’s crab meat, mayonnaise, beaten egg, lemon juice, Worcestershire sauce, hot sauce, 1 cup of the cracker crumbs, creole seasoning and salt and pepper. Stir the mixture very gently to make sure the crab meat is not broken up too much.

Butterfly your prawns slicing them down the middle, making sure not to cut all the way through. Open up your prawns, and divide your crab mixture into them evenly and close them up as much as you can without squeezing the filling out. Place your prawns stuffed side up on a cookie sheet. Sprinkle the remaining cracker crumbs over the prawns and drizzle with the remaining melted butter. Bake until golden brown, around 20 minutes. Serve your prawns with the lemon wedges so people can squeeze the juice over their prawns if they like.

These crab-stuffed jumbo prawns make a great holiday appetizer, but if you are looking to have them as a meal, they would be fabulous served with some pasta with a simple oil and garlic sauce or with a green salad on the side.
