Ingredients Required:

To prepare 4 servings of this meal, whereby each serving is 229g in size, here are the required ingredients.

• 4 bell peppers of any color (green, yellow, orange or red)

• One half cup of breadcrumbs
• Up to a quarter teaspoon of cayenne pepper (to your preferred spice level)
• One minced clove of garlic
• Salt and pepper to taste
• Up to a quarter cup of margarine or butter (depending on your preference)
• One celery stalk
• Up to a half cup of shredded cheddar or mozzarella cheese
• One egg white
• Up to one tablespoon of light mayo
• One half cup of mild or hot banana peppers (depending on your preferred spice level)

Cooking Directions:

1. Cook fresh crab meat by immersing it in a pot of boiling, salted water for about 20 minutes
2. Cool the cooked crab under cold tap water for handling
3. Chop all vegetables, with the exception of the bell peppers, into small pieces
4. Sauté chopped vegetables in a frying pan in margarine or butter
5. In a bowl, mix the cooked crab meat, sautéed vegetables, egg white and breadcrumbs
6. Add salt and pepper to taste
7. Add light mayo to increase moisture (depending on dryness of the mixture)
8. Carefully slice the tops off the bell peppers as to create a compartment to stuff the mixture
9. Use a spoon to insert the mixture into the hollowed-out bell peppers
10. Sprinkle cheese on top of the peppers to cover tops and contain the stuffing with melted cheese
