Lobster Caprese Salad with Dill-Basil Vinaigrette

Ingredients

Dill-Basil Vinaigrette:

  • 2 tablespoons white balsamic vinegar or apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon honey or agave
  • 2 teaspoons fresh basil chopped
  • 1 teaspoon fresh dill chopped
  • 1/2 teaspoon garlic peeled and minced
  • Pinch of crushed red pepper flakes
  • Salt and pepper to taste

Lobster Salad:

  • 1 1/2 cups cherry tomatoes halved
  • 1 cup cucumbers sliced
  • 1/2 avocado peeled and sliced
  • 6 oz Lobster Meat thawed
  • Chopped basil and dill sprigs for garnish
  • Whole wheat toast or multi-grain bread slices optional

Instructions

  1. Place vinegar, olive oil, mustard, lemon juice, honey, basil, dill, garlic, and crushed red pepper flakes in a small bowl and whisk until blended. You can also place the ingredients in a sealable jar or container and shake until blended. Season the vinaigrette to taste with salt and pepper.
  2. Place tomatoes, cucumbers, avocado slices, and lobster in a large bowl, drizzle with dressing and toss to coat and combine. Divide salad between bowls or plates and garnish with basil and dill before serving.
