Keto, Paleo and Whole30 Sheet Pan Fajita Shrimp and Sausage

Ingredients

  • 1 lb. Cameron’s Seafood Fresh Shrimp peeled
  • 1 lb. fresh chorizo sausage sliced
  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 1 red bell pepper seeded and sliced
  • 1 poblano pepper seeded and sliced
  • 1 red onion peeled and sliced
  • 3 garlic cloves peeled and minced
  • 1 lime juiced
  • 3 tablespoons avocado oil
  • 2 teaspoon chipotle chili pepper powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt

Instructions

  1. Preheat oven to 375°F.

  2. Line a large sheet pan with aluminum foil and evenly distribute shrimp, sausage, zucchini, squash, pepper, poblano, onion and garlic.

  3. Drizzle with lime juice and avocado oil and season with chipotle powder, cumin and salt.

  4. Bake for 15-20 minutes or until shrimp and sausage is cooked thoroughly. Serve hot.
