Quick and easy marinade
makes 1 cup (good for marinating 1lb. of seafood)

chipotle peppers in adobo
minced (canned)

garlic cloves
peeled and minced

lime
juiced

orange
juiced

cup
olive oil

teaspoons
granulated sugar

teaspoons
ground cumin

1 1/2
teaspoon
flaky salt

Whisk together marinade ingredients in a medium bowl until blended.

Place seafood in a plastic zipper bag or casserole dish and coat seafood with 3/4 cup marinade. Cover and refrigerate.

Refrigerate seafood for 1 hour before grilling. After seafood has been grilled and cooked brush with reserved 1/4 cup of marinade before serving.
