Keto, Paleo and Whole30 Sheet Pan Deconstructed Crab Stuffed Mushroom

Ingredients

  • 4 portobello mushrooms
  • 2 tablespoons olive oil
  • 1 lb. Cameron’s Seafood Jumbo Lump Crab Meat drained
  • 2 cups frozen spinach thawed
  • 1 red bell pepper seeded and chopped
  • 1/2 cup approved cashew cheese
  • 1 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 3 garlic cloves peeled and minced
  • 1 tablespoon fresh chives chopped

Instructions

  1. Preheat oven to 375°
  2. Line a large sheet pan with aluminum foil and evenly distribute mushrooms and drizzle with olive oil.
  3. Sprinkle on top of mushrooms with crab meat, spinach and peppers and dollop with cashew cheese. Season with salt, paprika and garlic.
  4. Bake for 15-20 minutes or until mushrooms are tender. Sprinkle with chopped chives before serving.
