Savory Chilled Corn Soup with Jumbo Lump Crab Meat 

Serves 2 

Ingredients

Chilled Corn Soup:

  • 3 ears of yellow corn kernels removed
  • 1/4 cup yellow onion peeled and chopped
  • 1 garlic clove peeled and chopped
  • 2 tablespoons sour cream
  • 1 1/4 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon sherry vinegar
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste

Cold Soup Toppings:

  • 6 oz Cameron’s Seafood Jumbo Lump Crab Meat
  • 1/4 cup cucumber diced
  • 1/4 cup tomatoes diced
  • 2 tablespoons fresh corn kernels
  • 2 teaspoons fresh chives chopped
  • EVOO for drizzling
  • Pinch of Old Bay or seafood seasoning

Instructions

  1. Place corn, onion, garlic, sour cream, vegetable broth, olive oil, vinegar, and cumin in a blender and puree until smooth. Season to taste with salt and pepper and refrigerate for 30 minutes before serving.
  2. Once chilled, divide soup between bowls and top with jumbo lump crab meat, cucumber, tomatoes, corn, and chives. Drizzle with extra virgin olive oil and sprinkle with seafood seasoning before serving.
