Savory Chilled Corn Soup with Jumbo Lump Crab Meat

Ingredients
Chilled Corn Soup:
3ears of yellow cornkernels removed
1/4cupyellow onionpeeled and chopped
1garlic clovepeeled and chopped
2tablespoonssour cream
1 1/4cupvegetable broth
1tablespoonolive oil
1tablespoonsherry vinegar
1/4teaspoonground cumin
Salt and pepper to taste
Cold Soup Toppings:
6ozCameron’s Seafood Jumbo Lump Crab Meat
1/4cupcucumberdiced
1/4cuptomatoesdiced
2tablespoonsfresh corn kernels
2teaspoonsfresh chiveschopped
EVOO for drizzling
Pinchof Old Bay or seafood seasoning
Instructions
Place corn, onion, garlic, sour cream, vegetable broth, olive oil, vinegar, and cumin in a blender and puree until smooth. Season to taste with salt and pepper and refrigerate for 30 minutes before serving.
Once chilled, divide soup between bowls and top with jumbo lump crab meat, cucumber, tomatoes, corn, and chives. Drizzle with extra virgin olive oil and sprinkle with seafood seasoning before serving.
