Preheat oven to 375°F.
Line a large sheet pan with aluminum foil and evenly distribute shrimp, sausage, zucchini, squash, pepper, poblano, onion and garlic.
Drizzle with lime juice and avocado oil and season with chipotle powder, cumin and salt.
Bake for 15-20 minutes or until shrimp and sausage is cooked thoroughly. Serve hot.
