Keto, Paleo and Whole30 Seafood Sheet Pan Dinners

Sheet pan dinners are fun and easy and with the addition of good quality seafood, the perfect family meal. Covering the spread of specialty diets each of these 3 recipes are Keto, Paleo and Whole30 approved.

Pro tip: Want to shorten your prep time even further? I love shopping the grocery store salad bar. Often times it is less expensive than the pre-cut vegetables in the produce section. Pick up what you need and cut the cutting and chopping time in half.

Pro tip: The instructions for each of these recipes asks that you line the baking sheets in foil. This way cleaning up is a super easy and it insures good caramelization of your veggies and seafood with reflective heat. 

Keto, Paleo and Whole30 Sheet Pan Fajita Shrimp and Sausage

Prep Time 10 minutes
Cook Time 34 minutes
Total Time 44 minutes
Servings 4 people

Ingredients

  • 1 lb. Cameron’s Seafood Fresh Shrimp peeled
  • 1 lb. fresh chorizo sausage sliced
  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 1 red bell pepper seeded and sliced
  • 1 poblano pepper seeded and sliced
  • 1 red onion peeled and sliced
  • 3 garlic cloves peeled and minced
  • 1 lime juiced
  • 3 tablespoons avocado oil
  • 2 teaspoon chipotle chili pepper powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt

Instructions

  1. Preheat oven to 375°F.

  2. Line a large sheet pan with aluminum foil and evenly distribute shrimp, sausage, zucchini, squash, pepper, poblano, onion and garlic.

  3. Drizzle with lime juice and avocado oil and season with chipotle powder, cumin and salt.

  4. Bake for 15-20 minutes or until shrimp and sausage is cooked thoroughly. Serve hot. 

Keto, Paleo and Whole30 Sheet Pan Spanish Salmon

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 4 people

Ingredients

  • 4 Cameron’s Seafood Salmon Fillets
  • 1 red bell pepper seeded and sliced
  • 1 cup Spanish olives sliced
  • 1 bunch asparagus spears trimmed
  • 2 tablespoons avocado oil
  • 2 teaspoons capers
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons salt

Homemade aioli:

  • 2 egg yolks
  • 2 garlic cloves peeled and minced
  • 1 lemon juiced
  • 1/2 teaspoon salt
  • 1/4 cup avocado oil

Instructions

  1. Preheat oven to 375°F.
  2. Line a large sheet pan with aluminum foil and evenly distribute salmon fillets, bell peppers, olives and asparagus.
  3. Drizzle with avocado oil and season with capers, smoked paprika and salt. Bake for 20-25 minutes or until salmon is cooked thoroughly.
  4. While salmon is cooking fill a blender with egg yolks, garlic cloves, lemon juice and salt. While blending pour oil in a thin stream until slightly thick and creamy.
  5. Drizzle salmon and vegetables with aioli before serving.

Keto, Paleo and Whole30 Sheet Pan Deconstructed Crab Stuffed Mushroom

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 4 people

Ingredients

  • 4 portobello mushrooms
  • 2 tablespoons olive oil
  • 1 lb. Cameron’s Seafood Jumbo Lump Crab Meat drained
  • 2 cups frozen spinach thawed
  • 1 red bell pepper seeded and chopped
  • 1/2 cup approved cashew cheese
  • 1 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 3 garlic cloves peeled and minced
  • 1 tablespoon fresh chives chopped

Instructions

  1. Preheat oven to 375°
  2. Line a large sheet pan with aluminum foil and evenly distribute mushrooms and drizzle with olive oil.
  3. Sprinkle on top of mushrooms with crab meat, spinach and peppers and dollop with cashew cheese. Season with salt, paprika and garlic.
  4. Bake for 15-20 minutes or until mushrooms are tender. Sprinkle with chopped chives before serving.
