Summer is the perfect time for seafood! Not only does this season open up outdoor cooking opportunities, it coincides with many fish and shellfish harvest seasons–offering us the freshest and most abundant options. That same seasonal abundance works with produce too!
This salad is all about Summer! We offer some customization too! The marinade/dressing that we use in this recipe works well with a number of different fish and shellfish options–and we highlight our recommendations. The leafy greens, fresh herbs, peppers, corn, tomatoes, cucumbers, and avocado are vibrant and flavorful. Those sweet, verdant, and savory toppings pair well with the citrusy-mustardy-garlicky dressing.
Preheat a gas grill or charcoal grill to medium-high heat.
While the grill is preheating, make the marinade and dressing by placing the olive oil, vinegar, mustard, marmalade, honey, garlic, salt, and pepper in a medium bowl. Whisk to combine and divide the dressing in half.
For salmon: Brush the grill grates with olive oil (to prevent sticking) and brush the salmon with some of the marinade. Place the salmon on the grill and cook for 5 minutes. Flip, brush with more of the marinade, and grill for another 5 minutes or until the salmon internal temperature reaches 130°F. Remove the salmon from the grill, brush with any remaining marinade, and set aside to rest for 2 minutes before serving.
For rockfish: Brush the grill grates with olive oil (to prevent sticking) and brush the rockfish with some of the marinade. Place the rockfish on the grill and cook for 4 minutes. Flip, brush with more of the marinade, and grill for another 4 minutes or until the internal temperature reaches 130°F. Remove the rockfish from the grill, brush with any remaining marinade, and set aside to rest for 2 minutes before serving.
For shrimp: Brush the grill grates with olive oil (to prevent sticking), place the thawed, peeled shrimp in a large bowl and drizzle with half of the marinade. Place the shrimp on the grill and cook for 3 minutes. Flip, brush with more of the marinade, and grill for another 2 to 3 minutes or until cooked through. Remove the shrimp from the grill, brush with any remaining marinade, and set aside to rest for 2 minutes before serving.
For lobster meat and crab meat. Once the grill has preheated, reduce the temperature to medium-low. Place the lobster or crab meat in a fine mesh grill basket, spreading out in an even layer. Grill for 3 minutes per side or until the seafood is hot throughout. Remove from the grill and transfer to a large bowl. Add the marinade and toss to coat.
To assemble the salad, divide salad greens and fresh herbs between plates or bowls. Top the salad with grilled seafood, mini bell peppers, cherry tomatoes, cucumbers, avocado, and corn. Drizzle the entire salad with the remaining dressing or serve with dressing on the side.
Optional Toppings: Feel free to grill some of the veggie offerings presented in this salad as well. The corn and bell peppers are especially good grilled. You could also include grilled croutons (focaccia or ciabatta bread make excellent grilled croutons). If you are a fan of cheesy topped salads, I have a few suggestions that would pair really nicely: a creamy gorgonzola, feta cheese crumbles, or goat cheese.

This is the second year that I received steamed crabs from Cameron's Seafood. I am from Dundalk MD now living in Tampa FL. I just received my streamed crabs from Cameron's for the 4th of July holiday. They were shipped 2-day ground and the icepacks were still frozen despite the current great wave. Had some tonight. Omg I've been buying from camerons for a few years and they never disappoint!!!! I try to taste everything. This month I bought 9lbs of Dungeness crabs and I was in heaven. They are so meaty, big and sweet. I live in Deer park ny and every month I oder from camerons. I'm definatly in love with this place. Next month I'll be ordering the deshelled crab claws. Oh and they gave me a free crab dip which was delicious with unsalted cracker... keep up the good work guys you have a customer for life.

All the way to Hawaii. No extra charges. Kind shipping people. I ordered 1/2 bushel of females mediums. Heavy AF. Other dealer have jacked up the shipping prices and add extra charges to just hand it off to UPS. Happy former Marylander.
