It is really fun **and really easy** to make your own Japanese sushi hand rolls at home. This style of sushi is called “Temaki”. Instead of the sliced, rolled maki, Temaki offers a more casual, DIY approach in a customizable cone.
Our favorite fillings? Seafood, of course! We love setting up a DIY station filled with nori wrappers, sushi rice, veggies, and seafood. Allowing our guests to fill, roll and nosh to their fill. Here’s how to craft your own DIY seafood sushi hand roll experience…

Step #1 Make the sushi rice.
Sushi rice is essential for your Temaki hand rolls. It is really easy to make with its slightly sweet and tangy flavor.
This recipe makes about 5 cups of sushi rice
Ingredients:
- 2 cups uncooked sushi rice
- 2 cups water
- ¼ cup rice vinegar
- ¼ cup granulated sugar
- 1 teaspoon salt
Instructions
- Place the rice in a fine mesh strainer and thoroughly rinse under cool water until the water runs clear.
- Combine the rinsed rice and water in a large saucepan and bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and cook for 12 minutes.
- Remove the covered saucepan from the heat and set aside for 10 minutes. The rice will continue to steam during that time.
- Place the vinegar, sugar, and salt in a microwave safe bowl. Warm the mixture in 30 second intervals until the sugar and salt has dissolved.
- Stir the vinegar mixture into the rice until absorbed. Cover the saucepan with a clean damp cloth to keep the rice from drying out.

Step #2 Prep the Seafood
An assortment of seafood is ideal for maximum customization. We like offering a selection of 4 to 5 options for guests to choose from. Our favorites include…
- Tuna Steaks, raw or seared
- Seared Salmon
- Spiced Shrimp or Jumbo Shrimp Cocktail
- Jumbo Lump Crab Meat
- King Crab Leg Meat or Snow Crab Leg Meat
- Seared Scallops
Portion or slice the seafood into thin ½ -inch strips or flake into bite-sized pieces. Smaller portions make for an easier assembly of the hand rolls. Feel free to pre-season the seafood using some Japanese-themed condiments: ponzu, teriyaki, tonkatsu, miso, wasabi, furikake or togarashi. We like having about 8 ounces (half a pound) of each seafood option for serving around 4 people.

Step #3 Prep the vegetables and nori wraps
The vegetables are here to highlight the seafood and balance the sweet-tangy sushi rice. We like offering a selection of several veggies that provide fun textural elements and tasty contrast.
Our favorites include…
- Avocado
- Cucumber
- Carrots
- Pickled Daikon Radish
- Pickled Ginger
- Shiso Leaves or Bibb Lettuce
- Scallions
- Portion the vegetables similarly to the seafood, focusing thin strips or slices for easy hand rolling.
- Look for high-quality nori sheets for easy wrapping and superior flavor. Cut the sheets in half (2 rectangles per sheet) and average that each person will probably consume 4 to 6 hand rolls.

Step #4 How to roll
- Place the nori sheets, shiny-side down in your palm.
- Add a few tablespoons of sushi rice to the nori sheet, spreading out in an even layer over one-half of the sheet (keep the other half of the sheet rice and filling free).
- Place some ingredients in the center of the rice, about 2 pieces of seafood and veggies.
- Roll the bottom left corner of the nori sheet up to the center of the top edge, forming a rough triangle shape. Roll to form a cone shape.
- Serve your DIY hand rolls with high-quality soy sauce and wasabi on the side for dipping and spreading.
