Got Leftover Soup?

The culinary conundrum that is leftovers. But(!), even as delicious as our soups are, we know that 32oz of seafood soup might make it into the leftover category. And(!), just because it’s a leftover doesn’t mean it needs to be repetitive or (dare I say…) boring.

So let’s jazz up those leftover soups!

We have 3 repurposed leftover categories; casseroles, pasta dishes and main dish sauces, all of which will certainly boost those soups for a round 2.

First, you must have soup (in order to have leftover soup)!

We have an award wining catalog of fan favorites! We have the Maryland Crabmeat Bisque, a super delicious creamy soup loaded with jumbo lump crab meat. The Maryland Crab Gumbo, a tomato-based cajun creation that’s deeeelicious! Our Lobster Bisque, a rich-creamy soup filled with fresh Maine lobster. And, lastly, our classic Clam Chowder, a very tasty creamy clam and potato soup.

 

Casseroles

The mighty casserole! I love making casseroles utilizing my soup leftovers. And, the creamier the soup the better! There are 3 different ‘layers’, if you will, to building a terrific casserole. A starchy layer, like potatoes, noodles or rice. A veggie layer, like; mushrooms, corn, bell peppers, asparagus, etc… And, the final layer, topping; cheese, bread crumbs or crushed crackers. 

Spoon your leftover soup in-between the starch layer (best if you par-cook the starch ahead of time) and the veggie layer (finishing off the dish with the topping of your choice) and bake until bubbly. Here are a couple of our favorite combinations!

  • Maryland Crabmeat Bisque with rice, bell peppers, asparagus and cheddar cheese.
  • Lobster Bisque with egg noodles, mushrooms, spinach and crushed buttery cracker crumbs (like Ritz crackers).
  • Clam Chowder with sliced potatoes, corn, peas, and bread crumbs.

 

Pasta Dishes

Yes, leftover soup can make some amazing pasta dishes! Baked dishes (like our above mentioned casseroles) or remixed into a delicious pasta sauce! A few key ingredient additions is all it really takes…Fresh ingredients, like; basil, tomatoes, mozzarella, ricotta, garlic, lemon, oregano and sausages. Along with some Italian pantry staples, like; olive oil, balsamic, parmesan, sun-dried tomatoes, olives, capers and pasta (of course). Here are a couple of our favorite combinations!

  • Maryland Crab Gumbo, crushed tomatoes, spicy sausages, red bell peppers, linguine and parmesan (a little spicy arrabiata-style pasta).
  • Lobster Bisque, manicotti (stuffed with ricotta, mozzarella, garlic and parmesan), basil and sun-dried tomatoes.
  • Maryland Crab Bisque, parmesan, garlic, lemon, capers, basil and penne (like a creamy pasta piccata) 

 

Main Dish Sauces

Convert that leftover soup into a saucy topping for your favorite proteins. This is probably the easiest leftover makeover on our list!. All it takes is a little roux (a thickening agent made with equal parts melted butter and flour) and your favorite side dishes, spoon your thickened soup (now, sauce) over top. Here are some of our favorite combinations…

  • Grilled or sautéed chicken breast with Lobster Bisque (great with rice and broccoli or peas).
  • Seared steak with Maryland Crabmeat Bisque (great with mashed potatoes and asparagus).
  • Baked or seared salmon fillets with Clam Chowder (with sautéed spinach).
