Crab salad rolls with rice wrappers make for the perfect healthy crab meat recipe.
This dish is light and delicious — you can feel guilt-free while eating these crab salad rolls! Given the light nature of all the ingredients, this healthy crab recipe really allows for Cameron’s jumbo lump crab meat to shine as the star ingredient.
Crab salad rolls are much healthier than fried spring rolls and they look beautiful with the colors of their various ingredients showing through the delicate rice wrappers. Crab contains omega-3 fatty acids and B vitamins, and these are just a couple of the health benefits it provides.
This crab salad roll recipe is our own but we love the peanut dipping sauce from Sally’s Baking Addiction salad rolls, so we featured this sauce here along with some additions to the recipe.

Healthy Crab Recipe
Ingredients
- 1 lb Cameron’s Lump Maryland Crab Meat
- 1 cup lettuce shredded
- 1 red bell pepper thinly sliced
- 2 green onions thinly sliced
- ¼ cup of cilantro leaves
- 2 tbsp basil leaves
- ½ lime juiced
- 14 round rice paper wrappers 8 or 9 inches in diameter
- Peanut Dipping Sauce
- ¼ cup peanut butter
- 1 tbsp hoisin sauce
- 2 tsp soy sauce
- 1 clove garlic minced
- 1 tsp sriracha or chili sauce
- 2 tbsp warm water
- ½ lime juiced
- 1 green onion thinly sliced
- 2 tbsp crushed peanuts
Instructions
- In a medium sized mixing bowl, combine the lettuce, red bell pepper, green onions, cilantro, basil, and the lime juice.
- Carefully mix in the lump Maryland crab meat so as not to break up the crab meat too much.
- Fill a pan that is large enough to hold your rice wrappers with warm water. Place the rice wrappers in the pan one at a time, soaking each one for 20-30 seconds until soft and pliable.
- Take each rice wrapper out of the pan and place it on a clean tea towel. Place 1/14th of the crab mixture onto one end of the rice wrapper and roll it up; roll it by folding the sides of the rice wrapper in, folding the end of the wrapper over the crab salad mixture, and then rolling it up tightly. Repeat this with the other 13 wrappers. If you don’t think you will have enough filling for the salad rolls, you can always use fewer wrappers.
- For the peanut sauce, whisk together all of the ingredients in a mixing bowl. If your dipping sauce seems too thick, you can add a bit more water to smooth it out a bit. Serve it in one dish or if you have people over, you can serve the peanut sauce in separate little dishes for dipping.
