ABOUT MARYLAND BLUE CRABS

The #1 Male crab, also known as a “Jimmy”, are typically the most sought after crabs. They typically range from 5 ½ – 6 ¾ inches. They are easily identified by their blue claws and inverted t-shaped apron which resembles the Washington Monument. #1 Males tend to have flakier meat.


Jumbo crabs are simply very large Jimmys. They typically range from 6 ¾ inches and up. These crabs are a rarity and therefore are not always available.


The #2 Male crab, are smaller Jimmys. They are typically caught right after shedding their old shell and have not quite filled out their new bigger shell. They range from 5 – 5 ½ inches.


The Females, also known as “Sook” can be identified by the orange color on the tips of the claws or their dome shaped apron. They can range up to 6 inches. The Sooks are typically sought after for the sweet taste and the egg roe that sometimes is present inside the crab. Sooks tend to have denser meat.

WHAT'S SO SPECIAL ABOUT MARYLAND BLUE CRABS?

Blue crab is really unlike any other crab in the world, thanks to the growing conditions, and the type of estuary we have here in Maryland. From a scientific perspective, the need for hibernation is the main reason Maryland crabs taste better than other types of crab — and also tastes better than blue crabs from other waters. Just like other creatures that hibernate, crabs need to build up fat stores to sustain them through the dormant period. This gives the crabs a buttery flavor that you won’t find anywhere else.

HOW TO REHEAT YOUR CRABS

Eat, reheat or refrigerate crabs immediately upon receipt. There is no appreciable loss of quality from reheating.

  • Place a steamer basket in a large pot with enough water to reach the bottom of the basket.
  • Once the water is boiling, place the crabs inside, season and cover.
  • Steam the crabs for five minutes or until the meat is hot throughout.

If you don't have a steamer basket on hand you can also reheat the crabs in the oven for approximately 10 minutes at 375°F.


Steamed crabs will keep in the refrigerator for up to 3 days after receipt.

HOW TO EAT MARYLAND BLUE CRABS

Cover your table with crab paper (or newspaper) and make sure you have plenty of paper towels on hand. Prepare some melted butter with lemon juice. Dump the crabs in the middle of the table and get crackin':

  • Twist off the legs and claws off the body. Discard the legs and put the claws aside for now.
  • Pull off the apron (the flap located on the abdomen).
  • Turn the crab over and pull upward on the shell from the back of the crab peeling it forward.
  • Grab each side firmly and bend in the middle, breaking in half. Take each half and break those in half too.
  • Pick the meat from each half. (Pro tip: slide the extracted meat across the top shell to pick up some delicious seasoning)
  • Crack the claws with a mallet and extract the meat.

  • We hand place each item inside a reusable styrofoam cooler lined with frozen gel packs for fresh products or dry ice for frozen products. We put coolant equal to half of the product weight; twice the industry standard. 
  • We stress tested all our packaging against heat, cold, drops, leakage and water damage to ensure your food arrives perfectly chilled between 34 to 37 degrees and in the same condition as it left our facility.
