Mother’s Day Seafood Feast Ideas

Celebrate Mom with a Seafood Extravaganza! Cameron’s Seafood is the online spot to either craft a creative brunch for your momma or give her the gift of seafood.

My mama, Jojo, being the good southern Maryland gal that she is would love nothing more than to celebrate the day by picking blue crabs in the backyard with the fam. We’ll line picnic tables with newspaper and sit picking our Premium Maryland Crabs (and gossiping). Jojo likes the big boys so I’m scoping out either the Premium Large Male Crabs or the Colossal Jumbos.

My grandma, Grown (a mushed together combination of ‘grandmother’ and her last name ‘Brown’-gotta love grandkids, right?) who in her blissful 97th year is not (nor ever has been) about getting messy picking crabs. So, I’m putting together some creative seafood brunch recipes for her.

 

Brunch my Grandma would be proud of…

She’s a classy lady, my Grown, and while picking crabs might not be up her alley, delicious seafood-themed brunch dishes are. Here are some of the Mother’s Day Seafood Recipe ideas I’m throwing around that I think she would love…

Hangtown Fry

Ever heard of this? I just stumbled upon it at a Virginia diner last spring and have been dying to try it out. A Hangtown Fry is a dish created by California gold miners that is like an omelet of sorts. Oysters are fried in bacon grease (cause there’s bacon in this omelet too) before being smothered in eggs and topped with chopped scallions and red bell peppers. This sounds delicious (Grown loves oysters) and Cameron’s Seafood fresh shucked oysters will be the piece de resistance.

 

Sweet Corn Waffles with Fried Fish

Elevating the fried chicken and waffles classic with this idea for sweet corn waffles and fried fish. I am deciding on whether to use Rockfish, Cod or Catfish for this recipe but either fish I pick I know it will come fresh and of the highest quality (thanks to Cameron’s Seafood from the shore to your door policy). The sweet corn waffles batter will be made with fresh summer corn and along with a combination of canned creamed corn-something my g-ma will swoon over.

 

Shrimp, Spinach and Artichoke Quiche

We all love spinach and artichoke dip…why not in quiche form and with Cameron’s Seafood Spiced Shrimp no less!? I’m thinking of executing this recipe by whisking the traditional dip ingredients with eggs and folding in the peeled spiced shrimp before pouring into a pie crust and baking…simple yet satisfying.

 

Crab Cake Croissants

I was thinking that mini crab cake sandwiches, like tea sandwiches, would go over really well with my family. Portion Cameron’s Seafood Jumbo Lump Crab Cake mix into little meatball sized portions, pan frying and filling them into cute little croissants (the bakery down the street makes really really good ones). I’ll probably serve these with a little tomato, garden lettuces and a not so spicy remoulade (Grown likes a little heat, not a lot of heat).

 

Patterson, what are we drinking? ….

Well…my mama will be enjoying her crab picking feast and my grandmama will be enjoying her brunch spread…but what on earth will we drink? Hmmmm…. I am batting around some ideas of brunch punches. I also want to make sure that I have cocktail and mocktail options available (I did mention that my Grown is 97 years young, right?…don’t want to get her too tipsy).

 

Blood Orange and Watermelon Fauxjito or Mojito

This sounds just right for a refreshing sipper. I’ll fresh squeeze blood oranges (their tartness will pair well with the sweetness of the watermelon) and puree watermelon before mixing with soda water, mint and a little simple sugar. I’ll leave it up to my family whether or not to add a little rum…

 

Kiwi Berry Riesling Sangria

This one will certainly be a hit with the fam. I’ll muddle a few peeled kiwis, strawberries and blueberries with coarse sugar and lime juice before mixing with club soda and riesling. I’ll garnish my pitcher with some slices of strawberries and kiwis before filling with ice and serving. I can also make a ‘0’ proof version using sparkling grape juice instead of the wine.
