Lobster Caprese Salad with Dill-Basil Vinaigrette

Keep those New Year’s resolutions going strong with a healthy seafood recipe! This Lobster Caprese Salad with Dill-Basil Vinaigrette serves up not only a hearty helping of lean protein, but a full serving of veggies too! The flavorful dressing infuses this salad with tart and tangy pops of vinegar, infused with fresh herbs and savory Italian spices.  

 

Lobster Health Benefits 

Seafood is often praised as a healthy protein. Compared with other “meats”, seafood is a great source of omega-3 fatty acids, Vitamin D, and protein. Fish and shellfish are also low in saturated fats, making them exceptionally good for heart health. 

Lobster is no exception. There’s this nasty misconception that lobster is “bad” for you because it raises cholesterol levels, but that is simply not true! That rumor is more associated with the popular preparations of lobster (most often these preparations are lobster soaked in butter) than the lobster itself. Lobster is a major source of important vitamins and minerals; B12, magnesium, Vitamin E, calcium, and iron, just to name a few! 

Lobster Caprese Salad with Dill-Basil Vinaigrette

Serves 2 
Prep Time 10 minutes

Ingredients

Dill-Basil Vinaigrette:

  • 2 tablespoons white balsamic vinegar or apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon honey or agave
  • 2 teaspoons fresh basil chopped
  • 1 teaspoon fresh dill chopped
  • 1/2 teaspoon garlic peeled and minced
  • Pinch of crushed red pepper flakes
  • Salt and pepper to taste

Lobster Salad:

  • 1 1/2 cups cherry tomatoes halved
  • 1 cup cucumbers sliced
  • 1/2 avocado peeled and sliced
  • 6 oz Lobster Meat thawed
  • Chopped basil and dill sprigs for garnish
  • Whole wheat toast or multi-grain bread slices optional

Instructions

  1. Place vinegar, olive oil, mustard, lemon juice, honey, basil, dill, garlic, and crushed red pepper flakes in a small bowl and whisk until blended. You can also place the ingredients in a sealable jar or container and shake until blended. Season the vinaigrette to taste with salt and pepper.
  2. Place tomatoes, cucumbers, avocado slices, and lobster in a large bowl, drizzle with dressing and toss to coat and combine. Divide salad between bowls or plates and garnish with basil and dill before serving.
