Spring Seafood Hors D’oeuvres for Easter 

Spring is in the air which means Easter is right around the corner! Whether you’re hosting a grand gathering or a casual brunch, we have some hors d’oeuvre inspiration featuring seasonal seafood. 

 

Shrimp 

Shrimp season runs from late March to December, making these tasty crustaceans perfect for Spring appetizers. We have oodles of shrimp options to help you craft the perfect appetizer selection, from easy apps to more involved morsels. 

For an easy appetizer, we have our Jumbo Shrimp Cocktail. This ready-to-eat, fully cooked shrimp cocktail comes with 2lbs. Of grade ‘A’ shrimp, complete with Cameron’s signature cocktail sauce and lemon! 

Another easy appetizer option is our Crab Cake Stuffed Jumbo Shrimp! The jumbo shrimp are butterflied and stuffed with 3oz of our award winning crab cake mix. You can butter-sauté the stuffed shrimp ‘a la stove top’ or bake in the oven, both make for super easy appetizers. 

For a little more involved, hands-on appetizer, we recommend this recipe for Bacon Wrapped BBQ Shrimp! 

Bacon Wrapped BBQ Shrimp 

Serves 12 

Ingredients

  • 1 lb. Fresh Shrimp peeled
  • 6-8 slices of bacon cut in half
  • 1/2 cup BBQ sauce
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 400°F, line a large baking sheet with aluminum foil, and generously spritz with cooking spray.
  2. Wrap the shrimp with bacon and secure with a toothpick.
  3. Brush the wrapped shrimp with BBQ sauce and place in the oven.
  4. Bake for 8-10 minutes or until the bacon has crisped and the shrimp are cooked through.
  5. Remove from the oven, transfer to a serving platter, and garnish with chopped chives or parsley.

 

Blue Crabs 

Tis the season for Blue Crabs! Blue season kicks-off in April, making Easter the perfect time to savor these sweet-buttery crabs. We love using our Jumbo Lump Crab Cakes, Jumbo Lump Crab Meat, and Lump Crab Meat for appetizers. Easy, pre-prepped items with endless possibilities. 

This easy app for Cold Crab Dip with Crudités uses our Lump Crab Meat for a nicely seasoned creamy dip, served with an assortment of fresh veggies. 

These Jumbo Lump Crab Meat Quesadillas make for an easy Tex-Mex appetizer, perfect for casual Easter parties. 

An easy hors d’oeuvre that everyone will love are Mini Crab Cake Bites! Simply portion our pre-made Jumbo Lump Crab Cake mix into 2oz meatballs or patties and bake or pan-fry (you can follow the same cooking instructions that come with the crab cake mix). 

 

Snow Crabs 

Spring marks the end of Snow Crab season (wrapping up in May), so no time like Spring-time to get in all that delicious Snow Crab goodness. Crab legs make for an exceptional appetizer, either partially picked for easy eats or just allowing your party-going guests to go wild and get cracking—everyone loves crab legs! 

If you’d like to get a little creative with your Snow Crab Leg appetizers, we have two recipes that are sure to please. This recipe for Homemade Guacamole with Crab Legs brings a whole new dip to the crab leg experience. And, this recipe for Crab Leg Bloody Marys will make the ordinary brunch, extraordinary. 

 

Clams

Like our Snow Crab Legs, Spring marks the end of Clam season too (sad face). These cold water mollusks enjoy the chillier temperatures, so Spring-time marks the final days for clam-time. 

Cameron’s top neck clams make for some mouthwatering delicious appetizers! Clams are super versatile, allowing you to create everything from casual dips to elegant, sauce drizzled steamers.

We love a good Creamy Clam Dip for Crudites. Like the above mentioned Jumbo Lump Crab Dip, a simple clam dip can be made by combining steamed, chopped clams with mayonnaise, cream cheese, green onions, lemon juice, a little Worcestershire sauce, and a dash of hot sauce. Serve your dip with raw fresh veggies. 

For something a little more elegant, try Steamed Clams with Sparkling Butter Sauce. This appetizer idea is one you break out for those ‘special occasion’ holiday parties. This sparkling butter sauce, aka. a beurre blanc, is made by simmering wine (in this case, sparkling wine) with a little minced shallot before slowly whisking in cold hunks of salted butter. The resulting sauce is velvety smooth and elegant. 

For a more casual appetizer idea, Fried Clams with New England Aioli is a great option. Fried clams are a staple in New England. Bring a little taste of that ‘up north’ flavor to your Easter. Serve your fried clams with a New England themed aioli, a combination of mayonnaise, garlic, minced pickles, and a dash of malt vinegar. 

 

Salmon 

No Easter brunch would be complete without salmon! And, thankfully, Spring marks the opening season for this popular fin fish. 

We have recipes for homemade Gravlax, perfect for brunchy bagel platters or those ever popular seafood charcuterie boards. If the weather permits grilling this Easter Sunday, why not make some Grilled Salmon Burger Sliders? 

For a chilled, easy appetizer, we love making these tasty Cucumber Salmon Bites using our Salmon Fillets. 

Cucumber Salmon Bites 

  • 2 English cucumbers, thick-sliced 
  • 2 cups Alouette or Rondele Garlic & Herb Cheese Spread 
  • 1lb Salmon Fillet, grilled and fork-flaked (we have tips on grilling seafood here)
  • Fresh dill or parsley for garnish 

 

Instructions 

Top cucumber slices with a heaping teaspoon of garlic & herb cheese spread along with a couple pieces of fork-flaked grilled salmon. Garnish the appetizer with a little sprinkling of fresh chopped dill or parsley before serving.
